French Pâtisserie Track: Six courses, one path

Macarons with feet, éclairs that rise, tarts that stay crisp. Every time.

Six courses on French pâtisserie with chefs Egor and Dmitrii Kozlovskii: macarons, éclairs, tarts and madeleines. It comes down to a handful of techniques, meringue, choux, dough and filling, and each course teaches the why behind them.

Why a track

French pastry looks easy until one batch fails

Macarons, éclairs, tarts and madeleines are the classics every home baker wants. They are also the ones that punish guesswork, and six unrelated videos won't fix that.

You don't know which comes first

Macarons or éclairs? Tarts or madeleines? Six courses on one cuisine, and no sign of which one to open first.

Every failure has its own mystery

Hollow shells, flat éclairs, shrunken tart crusts. The causes rhyme: meringue, choux, dough and temperature. Learned one at a time, you never see the pattern.

Buying one by one adds up

Each course is worth having. Six separate checkouts cost more than one plan, and you still have to choose the order yourself.

After the track

What your hands will know by the end

Not six playlists of watched videos. Skills that hold up on an ordinary Tuesday, in your kitchen, with your oven.

Bake macaron shells with smooth tops and ruffled feet in four shell types, and fill them with modern fillings.
Read choux dough instead of hoping it behaves, and bake éclairs that rise with no cracks and no hollows.
Roll, line and bake tart shells with no shrinking, no cracking and no soggy bottom.
Bake madeleines with the proud hump, filled and glazed so they are never dry and never plain.
Make egg-free and reduced-sugar macarons with real feet.
The path

Six courses, in the order that works

We open with Macarons 2.0, the most exacting of the six. Then choux, tarts and madeleines, and back to macarons with the modern, egg-free version. All six open the moment you enroll.

Is it for you?

Who this is for, and who should skip it

It is for you if

You love French pastry and want to make it at home, not just order it.
You're starting from scratch and want the theory explained, not skipped.
You already bake and want macarons, éclairs and tarts in your range.
You plan to gift or sell what you make and need results that repeat, batch after batch.

Better skip it if

You want one quick recipe, not a craft.
You only need one of the six courses. Buy it on its own instead.
You're not going to practice, and watching on its own has never piped a macaron.
You don't want to weigh ingredients on a scale.

FAQ

Questions, answered

Do I get all six courses right away?

Yes. All six courses open in your account the moment you enroll, and every lesson in your plan unlocks at once. Follow our order or start with the course you want most.

Where should I start, and does the order matter?

Start with Macarons 2.0. It opens with the tools and theory lessons, then walks through Italian meringue and four shell types. After that the order is yours, though the sequence above builds each skill on the last.

I'm a complete beginner. Will I keep up?

Yes. Every course here teaches from the foundations, with video lessons you can rewatch as often as you need. Macarons 3.0 is most valuable once you know the classic macaron, which is why it comes last.

What equipment do I need?

A home oven, a digital scale, a hand or stand mixer, a sugar thermometer and piping bags cover the macarons and éclairs. The tarts add tart rings or pans and basic pastry tools. Nothing needs professional equipment.

What about mousse cakes and entremets?

Those are in the Cakes & Entremets track: mousse cakes, mirror glaze, Napoleon and honey cakes, cake rolls and loaf cakes. This track stays on macarons, éclairs, tarts and madeleines, and no course is in both.

What is the difference between the plans?

All three plans include the complete core program of all six courses. Essentials is self-guided. Studio adds homework feedback and answers from the team for 1 year in every course, plus a certificate of completion for each. Signature adds every Signature-only lesson and upgrades you to lifetime access, while Essentials and Studio include 1 year of access.

I already own some of these courses. Do I pay for them twice?

No. Sign in before you check out, and what you paid for your courses comes off the track price, down to a minimum price that checkout shows you. If you are not signed in, checkout shows the full price.

What if the track is not for me?

Every plan comes with a real 14-day money-back guarantee. Join, watch the first lessons, try a first batch. If you decide within 14 days of purchase that it's not for you, email us and we will refund you in full.

Ready when you are

Feet on the macarons. Lift in the éclairs. Crunch in the tart.

Choose a plan, open course 1 and start baking French classics that behave. Every plan comes with a real 14-day money-back guarantee: if the track is not for you, you get your money back in full. And if it is, you will know. Your macarons will have feet.
