What equipment do I need?
A home oven, a digital scale, an immersion blender and a kitchen thermometer cover most of the track. The mousse courses add silicone or ring molds and freezer space, velvet is easiest with a small spray gun, and the loaf cakes use a standard loaf pan. Nothing needs professional equipment.
Mousse Desserts and Mousse Cakes Made Simple: do they overlap?
Both are in the track, and they teach different things. Mousse Desserts is the deeper course, with 13 to 15 entremets and petit gateaux. Mousse Cakes Made Simple is shorter, with five cakes designed around a home kitchen.
What is the difference between the plans?
