Compare the same stage

Photograph the tray and a fully cooled cross-section. A filled macaron is a different comparison from a plain shell.

Keep a simple record

Note your recipe, batter flow, liner, rack, oven mode and what changed. That gives your next test a clear purpose.

Use one complete recipe

Keep the method consistent while investigating the problem. Combining steps from different recipes makes comparisons harder.

Print the size you need and practise matching pairs. Get round guides in four sizes, hearts, tulips and ovals, plus a batch practice sheet.
